"Eating with the Ecosystem" at Tallulah on Thames

My friend Sarah Schumann is a professional small scale shellfisher in Rhode Island, and spends her summers  working at a salmon cannery in Alaska. She started “Eating with the Ecosystem,” an educational effort, as a way to refocus conversations about sustainable seafood around local "seafood-sheds." Lecture-dinners are held at local restaurants to showcase sustainable seafood, prepared by wonderful chefs, to educate diners about local seafood resources and practices. In November, such a dinner was hosted at Tallulah On Thames, in Newport, Rhode Island.

The evening and four course seafood dinner was themed around a variety of seafood taken from the George’s Bank region of our Atlantic coast. We enjoyed lectures by Brett Tolley, a fisheries activist from Cape Cod, and Matt McKenzie, a fisheries historian from University of Connecticut. The food was deliciously prepared by Owner-Chef Jake Rojas, and consisted of squid, scallops, skate, and monkfish.
